Karaage chicken is a crowd-pleaser for any ocassion. It is a perfect appetizer in big batches for food parties or as a single-serving entree in Bentos. It is marinated in an irresistibly aromatic soy sauce mixture and deep-fried until golden brown and crispy. This recipe will show you how to make the crispiest and tastiest karaage chicken with few ingredients.

Ingredients
The key ingredient in making karaage crispy is using katakuriko or potato starch. Potato starch allows the karaage to finish light and crispy β not soggy or greasy at all. If you cannot get your hands on potato starch, you can use corn starch or flour. However, keep in mind it will not be the same.
Another important ingredient is chicken thigh. You can keep the skin on or off, but using chicken thigh will ensure a juicy and flavorful karaage. If you use other parts of meat such as breast or tender, it will not be as juicy. Most, if not all, chicken karaages sold at restaurant or izakayas in Japan are made from chicken thigh.

Tips for follow this chicken karaage recipe
- Cut chicken as evenly as possible. This will make sure the chicken is cooked through evenly.
- Marinate chicken for at least 30 minutes or overnight. This will allow the flavors to come together and marinate the chicken well. I donβt recommend marinating the chicken for longer than overnight.
- Coat in katakuriko or potato starch. Like I mentioned earlier, it is important to use potato starch for a light and crispy karaage. You can find potato starch on amazon.
- Deep fry in neutral oil. You want to use neutral flavor oil like vegetable oil, canola oil, avocado oil, etc. so the flavor of the oil does not compete with the flavors of karaage.

KaraageΒ means to coat in starch and fry. This chicken karaage recipe uses the deep frying method. However, I know deep frying takes up a lot of time, especially when it comes to cleaning. Chicken karaage β fry method
Ingredients
- 1 lb Chicken thigh
- 2 tbsp Soy sauce
- 1 tbsp Sake
- 1 tsp Grated ginger
- 1 tsp Grated garlic
- 1 tsp Sugar
- 3/4 cup Potato starch
- Neutral oil for deep frying
Instructions
- Cut chicken thigh in bite size pieces (about 2 inches)
- Put chicken in a plastic bag or in a bowl
- Add soy sauce, sake, grated ginger, grated garlic, and sugar
- Mix well and marinate for at least 30 minutes or overnight
- Add in potato starch. Shake the bag to coat the chicken pieces well
- In a pot for frying, pour in oil and turn on heat to medium. Wait for the oil to heat up.
- Once the oil has heated up, shake off excess flour from the chicken and fry it in the oil. The oil should bubble around the chicken and make crackling noises. This means the oil is hot enough.
- Fry both sides until golden brown and the chicken is cooked inside. This should take about 3-4 minutes on each side. (You check the internal temperature or you can check by cutting open one piece of chicken and checking to see if it is not raw inside. If it is not raw, then the batch should be done)
- Remove from oil and put on a rack to let the oil drip down
- Serve hot and enjoy!
