Black cod or gindara has a super smooth and velvety texture that pairs irresistibly well with a sweet and savory soy sauce. This teriyaki black cod recipe comes together in 8 minutes in the air fryer and is best served with rice or in a bento.

What is Black Cod
Black cod in Japanese is called gindara which directly translates to βsilver codβ. Black cod started to gain its popularity outside of Japan in the recent years with its amazing health benefits. If you are located in the US, you may have heard of miso black cod (another popular way of preparing black cod) due to a famous Japanese restaurant in LA called Nobu. While miso cod is amazing, if you want to try something new or you are not a fan of miso, you have to try this teriyaki version. It is overall a lot lighter and does not overpower the fish.

Tips on making Teriyaki Black Cod in Air Fryer
- Worried about overcooking fish? Because of its high fat content, you donβt have to worry too much about overcooking it and drying it out. Of course you donβt want to overcook any fish, but even if you accidentally leave it in a bit longer, it is forgiving.
- No air fryer, no problem! If you do not want to use an air fryer, you can also cook this in an oven or in a pan. The method for the oven is the same as with the air fryer. If you are using a pan, make sure to cover the pan with a lid so the fish can steam. This will allow for a fluffier fish texture once itβs cooked.
- No cornstarch? Cornstarch is added to thicken up the teriyaki sauce. You can omit this if you do not want to add it. Just keep in mind the sauce will be liquid. However, still just as good with black cod and over rice!


Teriyaki Black Cod in Air Fryer
Equipment
- 1 Air Fryer (You can make this in a conventional oven as well)
Ingredients
- 1 tbsp Soy Sauce
- 1 tbsp Mirin
- 1 tbsp Sake
- 1/2 tbsp Sugar
- 1 tsp Cornstarch
- 1 Black Cod fillet
Instructions
Teriyaki Cod
- In a small bowl combine soy sauce, mirin, sugar, sake, and cornstarch
- Using aluminum foil, create a basket (big enough to fit the cod and about 5 cm height)
- Place cod in the aluminum foil basket and pour soy sauce mixture over cod. Loosely seal the top with aluminum foil. Make sure none of the soy sauce mixture is running out of the foil.
- Place in air fryer
- Air fry at 350F (180C) for about 8 minutes depending on size of fish
- Flip the fish over halfway through so it can cook evenly
- Serve with rice or in bento and enjoy!
