Yaki Onigiri

This recipe is how to make the easiest and tastiest yaki onigiri (Japanese grilled rice ball) in an air fryer.

Equipment

  • 1 Rice cooker
  • 1 onigiri mold optional

Ingredients

  • 3/4 cup uncooked rice 1 rice cooker cup
  • 3/4 cup filtered water 1 rice cooker cup (1:1 ratio of rice to water)
  • 1 tbsp soy saue
  • 1/2 tbsp sugar
  • 1/2 tbsp dashi powder kelp and bonito flavor concentrate

Instructions

  • Pour uncooked rice in rice cooker bowl and wash rice

  • Wash rice 3-4 times until water runs a little more clear and completely drain water

  • Pour filtered water to 1 mark on the rice cooker. If your rice cooker does not have this indication, it is 1:1 ratio of rice to water

  • Once rice is cooked, mix in soy sauce, sugar, dashi powder and mix well

  • Taste test and add dash of salt if needed

  • Take about 1/3 of the rice and mold into onigiri triangle (you can use your hands or an onigiri mold)

Make onigiri using hand

  • Wet hands before touching rice so rice does not stick to hands
  • Make a "V" or upside down triangle shape with whichever hand feels comfortable. I use my left hand.

  • Then place a third of the rice in your hands
  • Using the other hand, make a "C" shape and place on top of the rice. Your fingers and palm should firmly cup the rice while the middle of your hands is kept straight.

  • Your hands should look like this from the other side. Use your palm and finger to squeeze rice into about 1in width while also pressing down into the "V" shape.

  • Rotate the triangle counterclock wise, until desired shape

Make onigiri using plastic wrap

  • Using plastic wrap to shape onigiri is helpful because the wrap keeps the rice in place while you shape the onigiri.

  • Wrap plastic around the rice tightly. You should already get a ball shape

  • You can leave it as a ball or shape it into a triangle (same method as above).

  • Make sure to remove wrap before putting onigiri into air fryer.

Onigiri in airfryer

  • Make 3 onigiris
  • Put it in the air fryer
  • Air fry at 400F for 15 min
  • Check on onigiri and flip onigiri over on the other side at the half way mark (around 8 minutes)
  • Remove if onigiri is too crispy or toasty otherwise continue on until 15 minutes
  • Yaki onigiri should be hot and crispy
  • Serve hot and enjoy!
